Funfetti Cupcakes
Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup rainbow sprinkles
- Frosting of your choice (homemade)
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Fold in the rainbow sprinkles.
- Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool, then frost and top with extra sprinkles. Enjoy!
