Funfetti Cupcakes

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup rainbow sprinkles
  • Frosting of your choice (homemade)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  6. Fold in the rainbow sprinkles.
  7. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool, then frost and top with extra sprinkles. Enjoy!
